Happy Friday! I hope you all had a great week. It was a fast one for me as I prepared for a meeting with my PhD committee members. That’s all done now and I am ready to jump into the weekend!! What are you doing this weekend? I have a friend visiting that I am very excited to meet…for the first time!!

We started the week with a delicious breakfast smoothie, this very berry coconut smoothie, and it is only fitting we end it with another healthy nutritious breakfast recipe. This amaranth pudding with hazelnuts and berries is a grain-tastic breakfast that is flavorful and filling.

But let’s back up for a minute. Are you familiar with amaranth grain? I was not. It is one of the whole grains from Bob’s Red Mill that I recently discovered and it is quickly becoming a favorite. Itโ€™s an ancient grain that is high in protein and contains all the essential amino acids. It is also high in fiber and a powerhouse of a grain that is perfect for gluten-free and vegan diets.

I made this easy pudding with some almond milk but feel free to use coconut milk for added flavor and I summer-ized it with some fresh berries.
