Happy Monday friends! I hope you all had a great weekend and are ready for the countdown to the holidays.

I spent my weekend in snowy Minneapolis at a Pillsbury blogger holiday event. A whole day of baking with fellow bloggers in the Pillsbury Kitchens and meeting the wonderful people behind Pillsbury. It was freaking amazing and once I get my act together, I will share with you all the details, pictures and holiday cookies we baked on Wednesday (pinky swear).

coconut cassava bars - A gluten free dessert recipe from Blahnik Baker

Today, I am guest posting over at my friend Bintu’s blog, Recipes from A Pantry. Bintu is a fellow Sierra Leonean blogger living in the UK. She shares lots of creative recipes using pantry staples, like this Roasted Red Cabbage Pesto and her Roasted Pumpkin Thai Red Curry, which is an absolute favorite of mine.

When Bintu asked me a few months ago to guest post for her in December, I knew I wanted to share with her readers a Sierra Leonean inspired treat. So let’s take a brief break from holiday flavors and enjoy these coconut cassava bars. They include two of my favorite things from home; cassava (tapioca) and coconut in one tasty treat.

Head over to Recipe from A Pantry now for the recipe for coconut cassava bars!
