These Skinny White Chocolate Cranberry Muffins are tasty, indulgent and good for your waist line. They are everything you should be having for breakfast.

Skinny White Chocolate Cranberry Muffins

We are all friends here right? This is a no judgement zone. After all, we share our deepest love of chocolate, peanut butter and salted caramel here. So don’t judge me when I tell you I believe in silly superstitions. Yes, I am the first one to tell you they are silly but I just can’t help myself because they are so ingrained in me. It’s the African in me I suppose and we have a million superstitions that just stick with you for the rest of your life. Seriously.

You can’t sweep at night otherwise you sweep away all your good luck.  (I don’t risk it, EVER) You shouldn’t place your hand bag on the floor because you will be eternally broke. I make this mistake once in a while and probably explains my constant lack of funds (or could that just be my Pier 1 addiction? It’s hard to tell). You should never speak out loud your goals for fear they might not be achieved. Again I try to keep good with this. But see even though I think they are silly, a few of these remain with me that I practice/ avoid doing since I don’t want to find out whether the consequences are true or not.

Skinny White Chocolate Cranberry Muffins

A week ago on Monday, as I walked out of my apartment building, the first thing I saw was a black crow. I stopped in panic. Black crows are just a bad omen. They say (by they, I mean folks that come up with these rules and superstitions) seeing black crows early in the morning is a sign of death. Morbid I know. Especially for a Monday morning. Of course that did not make getting into my car and driving to work especially easy and less terrifying. Luckily, I have had no bad news to that effect (knock on wood) but my Monday was horrible in lab and that cloud has been over my head all week long. Everything just seemed to go wrong and get worse. It will pass I know but I just still can’t coincide my religious faith and scientific mind with these superstitions. Conflicted soul here. (Meanwhile, my husband thinks I’m crazy but what’s new?)

Skinny White Chocolate Cranberry Muffins

One thing I am not conflicted or confused about are these skinny white chocolate cranberry muffins. I’ve been craving a new muffin recipe lately and since we are all in the mood for lighter sweets these day, I decided to go for something ‘skinny’ but indulgent to make any morning cheerful. I used white whole wheat flour in these muffins as I did in this banana coconut bread last week. I don’t know why it took me so long to discover this flour, but it makes for a hearty healthy substitute to all-purpose flour. The muffins are moistened with homemade applesauce and Greek yogurt and sweetened with maple syrup. The tartness of juicy fresh cranberries are balanced with the sweetness of creamy white chocolate chips!! Pure indulgence and they say chocolate are anti-oxidants so they are healthy right? (Thanks Jocelyn).

2 ½ cups white whole wheat flour

1 1/8 teaspoon baking soda

¼ teaspoon salt

½ teaspoon cinnamon

¼ cup maple syrup

½ cup brown sugar

½ cup Greek yogurt

½ cup applesauce

1 egg, lightly beaten

1 teaspoon vanilla extract

¾ cup milk, room temperature

zest of 1 orange

1½ cup cranberries

½ cup white chocolate chips

Preheat oven to 350 degrees F. Grease muffin tins and set aside.

In a large bowl, whisk together the flour, baking soda, salt and cinnamon.

In a small bowl, mix the maple syrup and brown sugar until sugar is smooth. Add in yogurt, applesauce, egg and vanilla extract. Mix until combined. Add the wet ingredients to the flour mixture and gently mix until combined. Slowly add the milk and mix until mixture is thin. Fold in orange zest, cranberries and white chocolate chips.

Divide batter into prepared tins. Bake until lightly brown and a tester inserted into the center of a muffin comes out clean, about 10-12 minutes. Let muffins cool completely.

  5. My parents were pretty superstitious too and I always thought I’d be different when I grew up but some of those seem to have stuck now that I’m older too. Sorry to hear about that dark cloud around you and hope it passes this week. These muffins look amazing Zainab, I love the flavor combination! White chocolate and cranberries are fantastic and love that you made these skinnier – that means it’s ok to have more than two in one sitting??;)

    • Zainab Mansaray says:

Kelly it’s funny how some of these things stick to you right? Ahh the woes from our parents lol!! Thank you so much for the sweet comments! And yes because they are healthy I had two are each serving :0 I couldn’t help it!! Hope you are having a great week!

  7. Hi Zainab! These muffins look amazing! You really can’t beat the white chocolate and cranberry flavour combo- definitely one of the best! :)

  8. you are not alone here Zainab. I have so many from my culture too – I do not like stray black cats esp if the cross the road right in front of you, its considered unlucky. I religiously follow that or at least try to when possible..

    • Zainab Mansaray says:

Oh my gosh Dixya we totally say the same things too. I don’t like black cats because of that lol! Glad I’m not alone :)

  9. I am totally superstitious too so you’re not alone! People think I am crazy.. but it’s just how I feel :) And I how I feel about this muffins is I need one right now! I love, love the combo of white chocolate and raspberry and they’re skinny! I cannot say enough about your pictures, Zainab. These are so gorgeous! I can’t stop staring at them! It is all fabulous as usual!

  10. One of my good friends is very superstitious too and she always gets on me for leaving my purse on the floor! It’s not even something I think about, lol. These muffins look absolutely divine! I love the skinnier recipes that you’ve been posting!

    • Zainab Mansaray says:

Renee you should listen to her to save a few pennies lol! I try it but it’s so hard to remember the gazillion rules. Thank you! I’m living the skinny recipes too although I might start cake-ing again soon :0

  11. I’m super superticious as well… I hate black crows :–( Which I don’t hate are these muffins hehe Skinny chocolate muffins with greek yogurt and white chocolate? Sign me up! These babies look super delish ;–) x

    • Zainab Mansaray says:

Hahah I am glad I am not the only one hating on black crows. Silly things. Thanks girl! I knew you would love the greek yogurt use here!!

  12. Oh my gosh, I’m totally superstitious too! I have Irish and Italian blood so I get it from both sides… Not to add to your neurosis, but don’t ever leave shoes on the table (bad luck), pass anyone on the stairs (you’ll get in a fight), or burn bayberry scented candles (DEATH!). Your muffins look glorious, my dear! I’d love those tart berries with the nutty whole wheat and a kiss of sweetness from the white chocolate… pure heaven!

Allie oh my gosh!! We were meant to be friends indeed lol! I knew of shoes on the table but not the stairs or bayberry. Now I am freaked out and will never pass anyone on the stairs. Thanks for sending me some good fortunes!! Hahhah. By the way, can I use your description for these muffins? You captured it way better :)

  13. Thes muffins look incredible and are right on time. Im trying to shed a few pounds and if i can have these muffins and do it then it might not be so bad!! :)

  14. The purse comment made me laugh. I should stop putting my on the ground! I hope these muffins move the week in the right direction. They look delish!!

  15. These muffins look so incredible!!!! I have yet to try cranberry in my muffins but the combo with the white chocolate is sounding amazing and I must indulge in this soon. Thanks for making them skinny too!

  16. These look so good :-) And I love that they are figure friendly!

  17. I’m so glad that you aren’t conflicted about these muffins because they look perfect for my waistline :) I have to admit that I have never heard about some of the superstitions you mentioned, but now I will always think about where I place my purse and what time of the day I sweep. Have a great week, Zainab!

    • Zainab Mansaray says:

Hahhah Ashley, do watch your purse placement lol! Thank you very much. I hope you week is going great. I love your Stitch Fix post…that pink/fuchsia top is pretty!

  18. You know, even thought I don’t really believe in superstitions, I can totally relate. I don’t know if you would call this OCD or what, but I have this total disgust for the tags of my towels to be showing while they are hanging up. The tags have to be on the backside of the towel. Seriously, I’ve thought “something that I don’t like will happen if these tags are showing.” haha, I know, I’m a weirdo. But we all have our idiosyncrasies, right? :)

Now these muffins, these look great! I would eat these right up. Wish I had one for breakfast tomorrow morning!

    • Zainab Mansaray says:

Oh my gosh Julie, I do not like the tags on towel, pillows and blankets showing at all. Never thought about it…but must be some OCD hahha. Hope you are having a great week!!

  19. These look amazing! I’m really glad they don’t have any artificial sweeteners thank you for that!

  20. I don’t think I’m very superstitious in general – I even let my husband see my wedding dress before we got married! We had to take lots of pictures, you know ;)

But, I’m digging these lovely muffins!

    • Zainab Mansaray says:

I didnt think I was either lol but some just stick. I did do a first look too before our wedding and took lots of photos before the wedding. SO I guess I am not that superstitious ;)

  21. Beautiful muffins, Z! I just adore the tartness of blueberries, cherries and cranberries in any baked good. Although I am not superstitious, I’m SO SORRY you felt bad about that dastardly black crow! Since superstitions are beliefs, and beliefs are chosen, just chose not to believe that one. Also, if I am not wrong here, doesn’t the “death” card mean a new beginning with fortune telling? Chose to believe that there’s a new, bright beginning on your horizon! I’ll send up some prayers. :) xo

  22. I have a serious muffin weakness…and these look delicious! I love whole wheat flour, too…the slightly nutty flavor is perfect for so many recipes. P.S. Love the superstitions…and hope your week gets better soon!

  23. These are SUPER gorgeous! Pinned!

  24. Yep, breakfast this week is made.

  25. Those muffins look really good!

  26. I am sorry about your cloud over you but Don’t worry Zainab, I think things will get better. I can be superstitious as well about some things, but it’s probably the Irish in me. I have weird things I do because of that too like throwing salt over my shoulder etc. We also have weird sayings in my family like if you drop a knife it means a man’s coming. Of course, that could be good or bad I suppose.
These muffins look amazing though! I love cranberry so this will be a must for me. Plus who doesn’t like skinny :) Good luck with your week, you will be in my thoughts and prayers!!!

    • Zainab Mansaray says:

Ciara I had no idea that Irish’s also had some superstitions. Interesting!! Love the knife thing, I’ll keep it in mind. I hope you are having a great week :)

  27. These are so gorgeous! AND they’re skinny? A++!

  28. Wow these muffins look sooooo good and so very pretty…I’m loving the little flecks of red and white!

Eh, I gotta say I’m not superstitious in any way what so ever. Everyone in my family is I feel like the oddball most times rather than the other way around. When I take walks, there is a street that I turn on that usually has crows at the top of the tree at the corner. I think it is kinda wickedly beautiful between the leaves and the sunset…I love to write dark fantasy so maybe that’s why I see the mystique and charm of it than the creepiness.

Anyway. Try not to let it bother you…think about the positive especially when things like that happen. It’s all about keeping a positive state of mind.

Again, perfect morning muffins..I will definitely be pinning.

    • Zainab Mansaray says:

Thanks Tammy!! Everyone in my family is and I am kind of the least superstitious because I find most so silly. But I just don’t like crows. Ooo creep me out!

  29. I think I’m more OCD then superscitious. I can remember when playing volleyball in college, I use to bounce the ball 3 times before I would serve but when counting I would say “6,7,8″ in my head. Don’t ask me why, but if I didnt do it it would mess me up. Well all have our quirks, thats what makes life so fun and interesting. :)

Love this recipe, yet again girl. You have been craving breakfast muffins and bread now! Ugh… just 2 more weeks then I can make all your recipes again. Holding out till them.. pinning to make later!

    • Zainab Mansaray says:

Krista that’s so interesting. Counting 3 times? It’s a cute quirk indeed. Hang in there on the diet…2 weeks is going to be over before you know it. And keep sharing those recipes. My best friend keeps texting me about the hour she spent on your recipe index lol! (Oh she is so happy her name is similar to yours..Trista). She is very excited to change her diet and you just fueled that flame.

  30. Love anything that is skinny and has chocolate in it! :)

  31. I have never heard the sweeping superstition before but I’m glad I know it now–one more reason not to sweep :) These look SO good, especially the white chocolate. I feel all sorts of flowery things about white chocolate. I bet these are divine cut with the tart cranberries. Can’t wait to try these guys out!

  32. These are gorgeous! Definitely nothing superstitious or silly about a muffin that is skinny and looks amazing!!! You rocked these photos!

  33. I’m muffin crazy right now so glad to see you’re baking these beauties! Love the color and flavor!

  34. These sound so great! White chocolate, cranberry, and lightened up? I think I need these in my life! Love baking with white whole wheat flour…I swear my boyfriend never knows the difference. :)

  35. Given how often my experiments in lab suck…I’m pretty sure you’d be convinced I do bad luck things constantly!! I’m sure it will all blow over though…it always does.

I love a good skinny treat! And white chocolate and cranberry are a match made in heaven.

  36. Was wondering what the calories are for these

    • Zainab Mansaray says:

Peggy, sorry I didn’t calculate the calories. However, the recipe makes 15 regular sized muffins. You should be able to calculate it easily using any caloric counter tool.

  37. I’ve seen this floating around Pinterest! P.S. the handbag thing has stuck with me too, they use it here in Jamaica. Personally I hate placing my bag on the floor and avoid it at all costs, but also, I don’t want to be broke!! LOL. These muffins look so delicious and love that they are healthy!

    • Zainab Mansaray says:

Thanks Jessica!! I tell you it could help save some few pennies lol! Plus we pay so much for those purses anyway they shouldn’t be on the floor.

  38. Dear Zainab, These certainly are a healthy version of muffins. I bet they are perfect with morning coffee or tea.
    Blessings dear. Catherine xo

  39. I love hearing about people’s superstitions. I have two or three big black crows in my trees every morning and while I don’t hold the same superstition as you I really do not enjoy seeing them first thing in the morning. They are just so ominous looking.

I love cranberry and white chocolate together. What a great breakfast or afternoon snack!

  40. I’ll definitely be avoiding putting my purse on the floor now! These muffins look delicious – with the extra plus of being healthier! Thanks for linking to the In and Out of the Kitchen Link Party. Hope to see you next week.

  41. Oh my gosh! Those superstitions explain a lot of problems in my life!!! Haha! These muffins look amazing so I’ll just go stuff my face in them and ignore all my problems caused by not listening to superstitions!

    • Zainab Mansaray says:

Hahhah Julie, I’m glad I could help with some explanations lol! They are too silly though so keep ignoring.

  42. These muffins are beautiful Zainab! I love how healthy they are too! Pinned!

  43. I’m also really superstitious, so I totally don’t think you are crazy. These muffins look amazing, and I can’t believe they are healthy. I’m a big fan of white whole wheat flour, as well as whole wheat pastry flour. They are great healthy substitutes!

  44. The muffins look delicious and I hope your luck turns for the better and you have an amazing week!

  45. We all need some skinny muffins in our life at the moment. My biggies at the moment are carrot ones.

  46. I’m so sorry your week wasn’t great – that stupid black crow! Superstitions are definitely funny, but I think we all have some…I know that I do! Love this muffin recipe. I love skinny muffins – applesauce and greek yogurt are my favorite ways to lighten things up! Can’t wait to try this recipe!

  47. Talk about superstitions!!! You and I are in the same boat Zainab! Especially with that ‘do not talk about your goals aloud’ I’ts happened on SO MANY occasions that I don’t even tell my own family about developments until it has completely been achieved! Is that crazy? :D Weekend is just around the corner and I hope you get your rest! :) :) These muffins, btw, TOTAL WINNERS!!!!!!!! Love the flavour combo and they’re healthy! What more can anyone ask for!!!!

    • Zainab Mansaray says:

I’m so glad I am not alone here!! The goals thing just give the creeps too because it is not about you not achieving the goal but really that others with ill-intentions will try to prevent you. So crazy! Thanks for liking the muffins, they are delicious!!

  48. Zainab, I SO believe in superstitions! The whole crow thing, I truly believe. Here’s something personal, but I think you’d understand it. The day I said my good byes and left my best friend’s house. As I was leaving, there was a crow sitting on her roof and just being so noisy! To say the least, that was the last time I ever got to say good-bye to her. (She passed away the next day.)
Another crow (short) story… this one a happy one– When my husband and I was first dating, I will never forget how we were walking back to my truck in a parking lot and noticed a huge flock of crows JUST on MY truck! The tale is that a family is forming… and we are now married, bla, bla, bla….
But, we could share so many of our superstitions!
Now to these muffins, my friend! They look amazing …and moist! Thank you for sharing your creative muffins with us at the SSS party! Have a fabulous weekend! xo

    • Oh my Gosh!! I’m so glad I am not the only one here. Crows are just evil. I’m so sorry to hear about your best friend :( Superstitions just scare me and I try to adhere to the ones that I can to avoid the evil eyes lol! Hope you are having a great week dear :)

  49. Zainab, These look so delicious. What a great way to start the day. Thanks for linking up to BOTW party!!
